位於侏羅南部Rotalier的Domaine Labet,係改變侏羅白酒面貌的家族酒莊之一。1980年代末,Alain Labet與Pierre Overnoy同屬最早一批做ouillé的人:酒桶始終保持滿桶,拒絕氧化。後來成為Labet的Fleurs系列:唔再靠傳統酵母膜,Fleurs將Chardonnay同Savagnin的風貌原原本本呈現出來——🌸花香、精準、根據每塊田、葡萄、風土與年份都清晰展現。兒子Julien Labet在布根地 Domaine Ramonet待過之後,把這件事再往前推:有機耕作、幾乎不加硫、每一款酒標都寫得異常誠實。老藤、極低產量、不混田,這就是為什麼 Domaine Labet至今仍是全球最受追捧的侏羅酒莊之一。

Les Varrons 2018 是許多人第一支會找的老藤侏羅 Chardonnay:黏土覆在罕見Bajocian石灰岩上,有深度,也有結構。En Billat來自一小塊老葡萄園,結構緊實利落、帶煙燻。
Chalasse是村裡最受推崇的地塊之一——Ganevat都用呢塊田——葡萄藤自1947至2016年種植,在黏土與藍泥灰岩上,這次我哋有Fleur de Savagnin。另有Fleur de Marne La Bardette 2022,是1945年種的老藤Chardonnay🌱,礦物與柑橘香氣從鼻子一路走到口中。Lias與Les Champs Rouges(紅黏土)則是Labet較圓潤的一面。
架上還有Domaine Labet Macvin du Jura 2020。這是少見的Jura加烈甜酒😯,以葡萄汁混合酒莊自己的marc(葡萄白蘭地)釀成—好奇嘅朋友、鍾意加烈甜酒嘅試試佢!

Domaine Labet, the family estate in Rotalier in the southern Cotes du Jura, helped change what Jura white wine could be. In the late 1980s Alain Labet was among the first — alongside Pierre Overnoy — to make ouillé wines: barrels kept completely full, oxidation refused. That became the Fleurs line. Instead of the traditional veil, Fleurs shows Chardonnay and Savagnin as they are — 🌸floral, precise, plot by plot — grape, terroir and vintage left in the open. His son Julien Labet, after time at Domaine Ramonet in Burgundy, pushed the idea further: organic farming, almost no added sulphur, every cuvée labelled with unusual honesty. That combination of old vines, tiny yields and unblended sites is why Domaine Labet remains one of the most sought-after Jura producers in the world.

Les Varrons 2018 is the old-vine Jura Chardonnay many look for first — depth and structure from clay over rare Bajocian limestone. En Billat, from a tiny historic parcel, is taut, smoky and tightly drawn. Chalasse, on clay and blue marl soils planted from 1947 to 2016, is one of the most admired sites in the village — Ganevat bottles there too — and here it appears as Fleur de Savagnin. We also have Fleur de Marne La Bardette 2022 from 1945-planted Chardonnay🌱 on calcareous clay soil with expressive mineral and citrusy aromas that carry seamlessly onto the palate. Lias and Les Champs Rouges (on red clay) are the more open, generous side of Labet.
Also on the shelf: Domaine Labet Macvin du Jura 2020 — a rare Jura fortified sweet wine😯, made from grape juice blended with the estate’s own marc (their grape brandy) — for anyone curious, and anyone with a sweet tooth.

Domaine Labet Macvin du Jura 2020 - Bt

Macvin du Jura is a regional speciality: an AOC-designated fortified wine, or vin de liqueur, made by combining unfermented grape juice with Marc. (Marc is grape pomace brandy, distilled from the leftover skins, pulp, seeds and stems after winemaking.) The result is richly textured, aromatic and naturally sweet.
This cuvée is two-thirds unfermented 2020 Chardonnay juice from vines over 65 years old, blended with one-third Marc from 2013. Only the finest juices and promace brandies are used. The blend then ages 60 months in 300L oak before bottling on 16 December 2025, at 18% vol. and 150 g/L residual sugar.
The colour is amber-gold. The nose suggests quince, dried apricot, bitter orange, honey and walnut, with a discreet thread of aged marc. The palate is rich and viscous, yet kept lively by freshness, and the finish is long and warming. Serve lightly chilled as an aperitif, with dark chocolate or Comté, or as a wine for quiet drinking. Contains sulfites.

Old vines (~45 years old) in red clay ferment with native yeasts and rest a year on lees in used oak. Straw-gold, with yellow orchard fruit, plum, toasted almond, faint vanilla and mineral notes. Elegant, finely textured; bright acidity, plump mid-palate and a long saline, stony finish.

From three parcels (Le Crêt, La Bardette, and La Reine) on blue Lower Jurassic marl, fermented wild and aged 20+ months in used barrels. Lemon, pear, white stone fruit and toasted nut over wet chalk. Cold, linear and tightly wound, with classic acidity driving a lengthy saline close.

Five parcels on clay and blue Jurassic marl (vines from the 1940s onward), topped up and aged 18+ months in oak and concrete eggs. Flowers, fruit, toasted nut, beeswax and sweet spice. A rich, almost creamy attack meets sharp acidity and saline mineral drive; the finish is long, taut and vivid.

Julien Labet Cotes du Jura En Billat Chardonnay 2021 - Bt

This wine comes from a single Billat plot on clay and schist. It is vinified by parcel, kept on lees and raised in 228-litre barrels. The palate is supple, with open, generous aromatics. It sits well with oily fish or dishes finished in a cream sauce.

East-facing slope at 280 metres; 65-year-old vines from Massal selection on Bajocian and Bathonian limestone under yellow-ochre clay and eolien sediment.
