熱賣酒款又返嚟喇，新一批酒都到咗。之前有人問 Charles Dufour，今次有。其餘都係我哋鍾意、暫時未至於周街都見得到嘅酒莊。
Domaine Marnes Blanches Bulle Ton Body NV重新到貨。阿爾薩斯天然氣泡酒，以1978年種植的Pinot Blanc與 Auxerrois老藤釀造。帶青蘋果🍏、海鹽、燧石氣息，氣泡細綿。我哋仲有Charles Dufour Bulles de Comptoir #13。有人會將Dufour 比作”Aube嘅Selosse”：熟蘋果、蜜餞檸檬🍋，收結長同帶鹹。Antonin Cosnier Pernand-Vergelesses En Caradeux Premier Cru 2022 同樣回歸，清爽、充滿礦物感，適合佐餐。
今次第一次有Torocco Winery🇯🇵。葡萄來自北海道余市 Yoichi，日本極具潛力的冷涼產區之一，擅長芳香品種,由札幌主廚永尾明宏Akihiro Nagao主持。今次有款 Torocco Kerner 2024上架：花香、柑橘感鮮明，僅出產1,017瓶。想認識日本葡萄酒的話，可以由呢款開始。
新到 Domaine Nowack S. A. - Sans Annee NV，來自Vandières的Meunier和Chardonnay的小農香檳🍾，礦物中帶一點堅果香。勃艮第部分有 Jean-Pierre Guyon、Marc Colin et Fils 同 Cécile Tremblay 嘅出品。
德國紅酒有Karl Haidle Stettener Gehrnhalde Lemberger Trocken Grosses Gewachs 2021🇩🇪，來自德國符騰堡（Württemberg）產區，現由第三代莊主 Moritz Haidle掌舵：黑莓、月桂葉、煙燻，結構清楚。鍾意舊年份加州 Zinfandel嘅，有 Grgich Hills Estate Sonoma County Zinfandel 1988🍷：乾果、香料，同埋豐富深度。

We have restocked Domaine Marnes Blanches Bulle Ton Body NV, a natural sparkling wine from Pinot Blanc and Auxerrois grown on Alsace vines planted in 1978. It is the lively one: green apple🍏, sea salt, flint, with fine bubbles. Charles Dufour Bulles de Comptoir #13 is also back — Côte des Bar Champagne from Landreville. Dufour himself is the one people describe as “the Selosse of the Aube”. Ripe apple, candied lemon🍋, and a long saline finish. Antonin Cosnier Pernand-Vergelesses En Caradeux Premier Cru 2022 has returned too, bright and mineral, made for the table.
First time in the shop: Torocco Winery🇯🇵, with fruit from Yoichi in Hokkaido — one of Japan’s most promising cool-climate sites for aromatic varieties. It is the project of Sapporo chef Akihiro Nagao. This drop we have Torocco Kerner 2024: a floral, citrus-cut Kerner, only 1,017 bottles made. For anyone curious about Japanese wine, this is the one to look at.
Also new is Domaine Nowack S. A. - Sans Annee NV, grower Champagne from Vandières🍾, Meunier and Chardonnay, mineral and a little nutty. Burgundy comes in from Jean-Pierre Guyon, Marc Colin et Fils and Cécile Tremblay.
From Württemberg there is Karl Haidle Stettener Gehrnhalde Lemberger Trocken Grosses Gewachs 2021🇩🇪, a structured German red from a VDP estate now in Moritz Haidle’s hands: blackberry, bay leaf, smoke. Collectors of older California Zinfandel will find Grgich Hills Estate Sonoma County Zinfandel 1988🍷: dried fruit, spice and tertiary depth.

A traditional-method sparkler from equal parts Pinot Blanc and Auxerrois off 1978 Alsatian limestone vines. Whole-cluster pressed to steel, it ferments to 21g/l sugar, then is chilled and bottled to finish. Fine, delicate bubbles with apple-flint aromas, then green apple, grass and saline notes. Refreshing.

From Vandières in the Marne Valley, this non-vintage Champagne blends Meunier and Chardonnay with reserve wines aged up to a decade, dosed at 1.5 g/L with grape must. Fresh stone fruit, chalky minerality, a hint of rock salt and brioche on the finish.
Torocco Kerner 2024 - Bt

Only 1,017 bottles of this dry Kerner from Yoichi, Hokkaido, made with no added SO2. On the nose, crushed herbs and white peach lift from the glass. The sip is taut and light, green apple and lime zest over wet chalk, acidity cold and precise. Peach and herb hang in a clean, salty-fresh line.
Weingut Karl Haidle Stettener Gehrnhalde Lemberger Trocken Grosses Gewachs 2021 - Bt

Lemberger from vines over 40 years old on reed sandstone in cooler, east-facing Stetten. Dark berries and black cherry on the nose, then eucalyptus and herbs. Smooth yet precise on the sip, dense fruit, taut frame, a herbal finish that hangs on. Eighteen months in used barrique, six in large wood.

This Extra Brut Champagne blends 60% Pinot Noir with 30% Chardonnay and 10% Pinot Blanc, about 80% from 2019 and the rest reserve wines from 2010 to 2018. Straw-gold with a fine bead, it offers red berries, ripe citrus and yellow fruit on the nose, then bread and toast. The palate is taut and saline, fresh through the middle, with a dry bitter flick that keeps you coming back.

A pale, bright Premier Cru Chardonnay from Pernand-Vergelesses. The nose is direct, lemon and pear coming up clean. On palate it turns more mineral, with candied lemon, crunchy pear and a little spice, the finish holding on longer than expected.

All new wood, in 400 litre barrels. A fuller yellow colour, with a generous ripe yet balanced nose, not unduly heavy. A very light reductive note as well. Excellent tension on the palate, with considerable depth of fruit. Bacon fat behind, possibly a form of new oak reduction. Drink from 2027-2031. Tasted Nov 2024.

Aromas of dried cherry, raspberry jam, blackberry, and plum, layered with leather, tobacco, and a whisper of earth. On the palate, medium- to full-bodied and supple, with dried fruit flavors, savoury complexity, and soft, rounded tannins leading to a long, spicy finish. Best with slow-cooked lamb, game, or aged cheeses.

Reductive with perhaps a slight volatility as a top note, but well within my threshold. Fresh chiselled acidity at the back, a limestone wash, yet all with an impressive intensity of quality white fruit backed by perfectly integrated acidity. Domaine Cecile Tremblay Bourgogne La Fontaine 2022 - Bt

A Bourgogne Pinot Noir from purchased fruit, made only when the grapes are good enough. Crushed red cherry and wild berries on the nose, a little floral lift and faint earth. On the palate it is silky and airy at first, then unexpectedly dense, with bright acidity and a refined finish.
