๐ณBeneath the vines of Legrand Latour lies something no other Champagne producer can claim: a vast, hand-carved underground world that is both cellar and museum, filled with 45-million-year-old marine fossils๐คฏ.
In Fleury-la-Riviรจre, Thibault Legrandโs father began digging in 2004 after discovering fossilised shells among the vines๐๐ฑ. What started as a simple curiosity grew into the remarkable a 250-meter-long โCaves aux Coquillages.โ Deeply moved by his fatherโs persistence, Thibault carried that same belief into the vineyard. When he left the cooperative in 2017 to make his own wines, his father even carved more caves to house the barrels and bottles.
Thibault farms without herbicides, with almost no tillage, and braids the shoots by hand. While many factors shape a wine, he believes geology plays the greatest role in its identity๐งก โ which is why every Legrand Latour cuvรฉe is named for the ancient rock layer beneath its roots.
In the cellar the approach stays pure: native yeasts, gravity only, and virtually no sulfur. From the 2020 vintage, certain cuvรฉes have used the โAgrapart methodโ to the second fermentation, with fresh grape must replacing a conventional sugar-based tirage โ so the wines gain no extra alcohol. After bottling, every Legrand Latour Champagne rests rest on cork for 30โ40 months inside those fossil-lined family caves before hand disgorgement.๐พ
