Maison Chantereves而家係勃艮第最紅嘅名字,人人講起都話要試。日本人Tomoko Kuriyama同佢土生土長嘅勃艮第老公Guillaume Bott釀出嘅酒,乾淨透明到一個新境界,德國人嘅精準、日本人嘅細膩,再加埋法國人骨子裡嘅terroir直覺,三樣完美結合🤗。產量很少,很快就會搶晒。
Guillaume喺Etienne Sauzet 學師,之後仲做過傳奇Simon Bize嘅釀酒師;Tomoko喺德國Geisenheim讀書,喺Rheingau掌管過老字號Friedrich Altenkirch,之後先決定喺Burgundy落地生根。2010年佢哋創立咗Chantereves,係一間極度講究嘅微型negociant;到2020年佢哋買咗4.9公頃自己嘅靚地🌱,主要喺 Savigny-les-Beaune、Chorey-les-Beaune 同 Hautes-Cotes de Beaune,計劃更上一層樓。
葡萄園採用有機和生物動力法耕作-主要使用馬匹耕地,人工播種多種覆蓋作物,僅使用脫脂牛奶、發酵植物以及極少量的硫和銅進行處理。酒窖中:100%整串紅酒採用輕柔的腳踩法,白酒則採用緩慢的整串壓榨,幾乎不使用SO2,全部在舊橡木桶中陳釀,酒泥陳釀兩個冬季,裝瓶過程也盡可能減少人為干預。

Maison Chantereves is the Burgundy name on everyone’s lips. Tomoko Kuriyama (Japanese) and her Burgundy-born husband Guillaume Bott craft wines of breathtaking purity and transparency, blending German precision, Japanese meticulousness, and deep French terroir instinct🤗. Production is tiny and disappears fast.
Guillaume honed his craft at Etienne Sauzet and as winemaker at the legendary Simon Bize; Tomoko studied at Geisenheim and ran historic Friedrich Altenkirch in the Rheingau before settling permanently in Burgundy. They launched Chantereves in 2010 as a meticulous micro-négociant; in 2020 they acquired 4.9 hectares of their own outstanding vineyards 🌱 in Savigny Les Beaune, Chorey les Beaune and the Hautes Cotes de Beaune, and the project reached a new level.
Vineyards are farmed organically and biodynamically—horses plow mostly, diverse cover crops are hand-sown, treatments limited to skim milk, fermented plants and miminal sulfur & copper. In the cellar: 100% whole-cluster reds softly foot-trodden, slow whole-cluster pressing for the whites, little or no SO2, aging exclusively in old barrels, two winters on the lees, and bottling with minimal intervention.
The wines are vivid and alive💞 — reds are remarkably detailed, pure and finesse-driven; whites are are lean, mineral, and vibrant. Quiet, eloquent, and pure, they feel like silk in sunlight. One sip and you understand why Chantereves has become impossible to ignore.

Les Monts de Fussey is located above Echevronne at 400m, on a southeast slope with stony limestone-marl soil. The wine is crafted through carbonic maceration with whole bunches for a week before pressing, offering an intense nose of ripe fruit and pear, with a complex, mineral palate featuring citrus and cider apple notes.

From a vineyard which is run biodynamically and by horse, at the middle of the west-facing slope. Pale lemon with a green tint. Good volume of fruit here with some discretion, then really opens up to bring out a floral aspect. I love the finish where there is salt and a squeeze of lemon on the stones. Tasted Apr 2021.
