Working just 10 hectares of tiny, steep schist parcels, Damien farms with life and precision: cover crops, low yields, golden-yellow ripeness (a deliberate move away from the old green-harvest style). In the cellar: native yeasts, minimal sulphur, no batonnage, and a patient 18-month elevage. The result is pure, electric, profoundly mineral Chenin that sings of wet stone and ripe fruit – built to age for decades yet irresistible right now.😋
