Wine Dinner: Gaspard Brochet’s Wildly Complex & Elegant Champagnes

🥂Join us on Friday, May 29 for a wine dinner at TABLE by Sandy Keung at H Queen’s, where beautifully prepared fresh seafood and seasonal ingredients meet the distinctive champagnes of Gaspard Brochet.

Gaspard Brochet is one of the most exciting young winemakers from the Montagne de Reims🌟. Born in 1995 into a family with deep Champagne roots, he grew up among the vines before working in graphic design. He returned home in 2013 and took over the family estate in 2017–2018. Today, he stewards a small 3.2-hectare domaine on the northern slopes across Ecueil, Sacy, and Villers-aux-Noeuds, with some of his 14 parcels dating back to the 1950s and ’60s🌱. Though his father made wine under the Vincent Brochet label and his uncle is the respected Emmanuel Brochet🤩, Gaspard has forged a strikingly personal path, unburdened by formal oenological training.

His winemaking is driven by intuition, experimentation, and respect for each site’s individuality❤️‍🔥. He picks at full maturity, gently presses in a traditional basket press, and lets the juice flow by gravity into a mix of barrels (many new) for spontaneous fermentation. Everything is done by feel: minimal sulfur, rare malolactic fermentation, and tailored stirring. Bottling follows the lunar calendar under cork with slow hand-riddling, yielding wines of remarkable purity, depth, and precision.

Gaspard’s wines stand out for their vivid sense of place, combining the freshness and finesse of the northern Montagne de Reims with impressive length, texture, and personality. 😍

The 333 cuvee is Gaspard’s signature non-vintage Champagne and a perfect reflection of his philosophy. The number represents three key elements: the three classic varieties (Pinot Noir, Chardonnay, Meunier), the three villages, and a blend of three vintages. Each letter (333 A to 333 F) denotes a different assemblage or parcel emphasis, offering unique expressions rather than a hierarchy of quality. The two 333F cuvées are pure Pinot Noir from the same villages — one Blanc de Noirs Extra Brut, the other Rosé de Saignée.

With only around 8,000 bottles produced annually, Gaspard Brochet’s refined, expressive champagnes🍾 capture the quiet confidence of a talented grower redefining his corner of the Montagne de Reims.
