Champagne Piollot Pere et Fils never followed the standard script🤭. While others chased trends, this independent family estate in the Cote des Bars quietly forged its own path🌟 — fighting for the Aube’s right to Champagne, preserving rare Pinot Blanc vines when neighbors ripped them out, and boldly committing to organic and biodynamic viticulture.
Founded in the late 19th century, the domaine owes much of its independent spirit to Roland Piollot’s great-grandfather, 💪🏻who helped lead the successful 1911–1927 fight for the Aube’s inclusion in Champagne. His father Robert continued this legacy by planting the iconic Val Colas Robin parcel in 1955 using sélection massale and courageously preserving Pinot Blanc🌱 when most neighbors were ripping it out in favor of Chardonnay and Pinot Noir — a choice that still defines the wines’ distinctive character.
Today, fifth-generation vigneron Roland works alongside his wife Dominique Moreau, with their daughter Jeanne joining the estate in 2018 as the sixth generation. The 8.5-hectare estate (with over 50% of vines over 40 years old) began organic conversion in 2009, achieved full organic certification in 2014, and obtained biodynamic certification in 2020.
💝Everything is estate-grown, hand-harvested, and fermented with native yeasts. Most wines age in stainless steel, with some base wines in barrel or foudre. Instead of the usual Brut, Rosé, and Vintage lineup, Piollot focuses on three expressive single-vineyard, single-variety cuvees: Come des Tallants (Pinot Noir), Champs Rayes (Chardonnay), and the flagship Colas Robin (Pinot Blanc). Occasional maceration rosés appear in exceptional Pinot Noir years. Bottles spend 4–6 years on the lees and are disgorged with zero dosage.
The result is pure, precise, age-worthy Champagne🥂 — bright, mineral-driven, elegantly fruity, and savoury, with crystalline clarity and no masking sweetness.
‘Cuvee de Reserve Brut’ - Secret non-vintage cuvee they produced (~30000 bottles a year) for loyal clients only. Fresh and bright.
‘Come des Tallants’- 100% Pinot Noir from sunny south-facing Côme des Tallants vines planted in 1980. This full-bodied Blanc de Noirs offers power and vibrant natural acidity. Aged 4 years on the lees.
‘Colas Robin Pinot Blanc Brut Nature’ - Rare 100% Pinot Blanc from the 1955 Val Colas Robin parcel. Robert preserved this variety against the trend. Floral, honeyed and mineral. Aged on lees for 5 years.
‘Champs Rayes’ - Elegant Chardonnay from the “Striped Field” vineyard with two-colored marl soils. Aged 6 years on lees. Aroma of melon, lavender honey and toasted brioche opens to a palate of bright citrus, honey and refined minerality.
