Nestled across Gétigné, Cugand, Clisson, and Vallet in Muscadet, this 15-hectare estate—organic since 2009 and biodynamic since 2020—produces wines that redefine the region’s potential. Vines thrive on unique soils of sand, silt, and gabbro, a striking black igneous rock that imparts a distinct mineral edge and subtle spice. This terroir shines in every bottle, balancing vibrant fruit with captivating minerality.
Jerome’s vineyards are a tapestry of diversity, with 90% Melon de Bourgogne alongside rare varieties for the region like Chardonnay, Savagnin, Folle Blanche, Pinot Gris, and Sauvignon Gris. His reds are equally compelling, featuring 40% Cabernet Franc, 40% Merlot, 20% Pinot Noir, 12% Gamay Noir with white juice, and 12% Cabernet Sauvignon. By harvesting each plot based on vine age rather than location, Jérôme captures the unique personality of each vine, ensuring every wine tells its own story💌. In the cellar, native yeasts, whole-cluster fermentation, and vessels like oak barrels, concrete eggs, and amphorae create wines of elegance and depth. Notably, his use of malolactic fermentation for Melon de Bourgogne adds a creamy complexity rarely seen in Muscadet.
