Located just west of Troyes, Montgueux is a rare chalk hill rising from flat plains, with ancient 13-million-year-old soils and ideal south-southeast sun exposure. These conditions yield Chardonnay grapes with distinctive minerality, fuller body, and vibrant layers of exotic and citrus notes, balanced by crisp acidity, setting them apart from the lighter, mineral-driven wines of the Côte des Blancs.
The Lassaigne family has worked this exceptional land since 1964, but Emmanuel Lassaigne, who took over in 1999, has elevated the estate to new heights. His hands-on, minimal-intervention approach includes eschewing chemicals in the vineyard, minimal sulfur in the winery, and extending secondary fermentation—sometimes twice—for finer bubbles and a creamy mousse. By returning to traditional methods like slow, gentle riddling and using natural yeasts, Emmanuel crafts Champagnes that vividly express Montgueux’s chalky soils💛🤍
The evening begins with Les Vignes de Montgueux Blanc de Blancs Extra Brut NV, a lively, mineral-driven Champagne with shimmering citrus notes, introducing the domaine’s style. Next, Le Cotet Blanc de Blancs Extra Brut NV, sourced from older vines (50-year-old) on steep, chalk-rich slopes, delivers deeper intensity and a striking saline finish.
A highlight of the night will be a three-vintage vertical of the Brut Nature Millésime (2014, 2015, and 2016). This side-by-side comparison reveals how differing harvest conditions shape the wines: the structure and finesse of 2014, the generosity of 2015, and the crystalline tension of 2016. Dinners like this allow us to slow down and appreciate how they evolves from year to year.
We’ll then turn to the jewel of the estate: Clos Sainte-Sophie. Produced from a historic walled vineyard with a lineage dating back centuries, its combination of intensity, elegance, and chalky depth makes it one of Montgueux’s most striking single-vineyard Champagnes. Tasting two consecutive vintages—2017 and 2018—side by side offers a rare glimpse into both consistency and vintage expression.
The evening concludes with the Les Vignes de Montgueux Extra Brut Rosé NV, a Champagne of lift, freshness, and subtle red fruit, perfectly suited to wrap up the journey.
