Why Guillaume Gilles’ Cornas Is Becoming Impossible to Ignore
Guillaume Gilles is one of the most exciting winemakers working in Cornas today. He learned the craft from two of the Northern Rhone’s great traditionalists—first as an apprentice alongside Robert Michel in the village itself, then for four years with Jean-Louis Chave in Hermitage🙂↕️—before starting his own domaine in 2007. After Michel retired, Gilles rented part of his old Chaillot holdings and still vinifies and ages his wines in the historic cellar beneath Michel’s house in the centre of Cornas.
He began with those old massale vines on the steep granite slopes, and his approach remains quiet and careful. The vines are worked by hand, yields are kept low, and the farming is organic. In the cellar he prefers to stay out of the way: whole-bunch fermentations with native yeasts, no fining or filtration, and 15–18 months in older demi-muids. The wines are pure, expressive Cornas—deep and spicy, with real energy and the kind of balance that drinks well young yet ages beautifully🙌.
Cotes du Rhone Les Peyrouses Rouge is made from old vines on the sand-and-clay flats in Cornas, covered with large galet stones and vinified exactly like the estate’s Cornas. It is savoury, energetic, and far more serious than a typical Cotes du Rhone—essentially a mini-Cornas in character and intensity. Cornas Nouvelle Les Rieux comes from higher white-granite slopes at 400–450 meters. It is the brighter, more fragrant of his Cornas, with lively red fruit and spice, moderate alcohol, and a freshness that Michel himself recognized as recalling the Cornas of the 1970s and ’80s.
Both are made in small quantities and already show the kind of quality that makes them hard to forget🫶. Once you taste them, it’s easy to see why more people are seeking them out.

Domaine Guillaume Gilles Cotes du Rhone Les Peyrouses 2021 - Bt
HK$450 ▷ HK$425
Deep garnet pure Syrah from mature vines planted on the Cornas plain, where stony soils sit over sand and clay. Pungent notes of smoke, dark berries, and olive open onto a dense, juicy mid-palate of black fruit, game and subtle bitterness. Firm tannins build through a long, peppery finish with savory grip — an intense, structured Northern Rhone expression.
Domaine Guillaume Gilles Cornas Nouvelle Les Rieux 2018 - Bt | VNS93
HK$720 ▷ HK$680
Deep violet color. Vibrant aromas of black raspberry, cherry, exotic spices and potpourri are complicated by a smoky mineral quality. Nicely concentrated and energetic on the palate, offering bitter cherry, dark berry and salty olive flavors and a suave, floral top note. The cherry and mineral notes carry through a very long, seamless and penetrating finish that's framed by smooth, well-knit tannins. Those who slavishly adhere to the stereotype that Cornas is all about weight, rusticity and brute power should check this bottling out, from any vintage, and then proceed to recheck their supposed wisdom...if they are capable of doing so.
