Simon Colin早年與父親（包括在勃艮第同南非）及叔叔 Bruno共事，並曾擔任Domaine Etienne Sauzet助理釀酒師，因此很早形成自己的釀酒理念。2017年他開展小型 negociant項目，以自由實驗。項目至2021年成績已相當出色，他爸爸遂將約9.3公頃交託俾他，包括 Les Vergers、Morgeot及其他一級園，另有Saint-Aubin、Santenay及Maranges的葡萄園。
葡萄園已轉為有機耕作（由2024年份起獲認證），並在可行範圍內採用生物動力法。釀造手法低調現代：自然發酵、謹慎處理酒泥與硫磺，並結合木桶、大桶及混凝土蛋。整體着重清新、通透與風土表達，使果味與礦物感保持突出。

Simon Colin is quickly becoming one of the most compelling young voices in Chassagne-Montrachet🌟.
He comes from one of the village’s most recognizable family lines🏡. His grandfather, Michel Colin-Deleger, built a respected estate later divided between Simon’s father, Philippe Colin, and uncle Bruno Colin. Related branches include Joseph Colin, Marc Colin, and Pierre-Yves Colin-Morey. The name carries weight in Chassagne—and sets a high bar.
Working with his father (including in Burgundy and South Africa), his uncle Bruno, and as assistant winemaker at Domaine Etienne Sauzet, Simon developed his own ideas early. In 2017 he began a small negociant project to experiment freely. By 2021 the results were strong enough that his father handed him roughly 9.3 hectares, including excellent parcels in Les Vergers, Morgeot and other premier crus, plus sites in Saint-Aubin, Santenay and Maranges.
He converted the vineyards to organic farming (certification from the 2024 vintage) and applies biodynamic practices where possible. In the cellar the approach is quietly modern: spontaneous fermentations, careful lees and sulphur management, and a mix of barrels, larger vessels and concrete eggs. The focus is freshness, transparency and terroir so fruit and minerality stay central.

Tasting note
The primrose yellow aspect is a little more pronounced. A more opulent bouquet here, with considerable tension though on the palate. Does it fill out the middle? I think more a question of backwardness. This does build really quite nicely, a trace of lime associated with the fresh mirabelles, and good length. Drink from 2027-2035. Tasting note
Clear pale lemon yellow. The nose is somewhat neutral but this becomes very attractive on the palate, a slight custard texture, a bit of yellow plum fruit, just the right oak in the background, and enough acidity to maintain tension. A purchased wine, provided in must. Pale yellow. Quite a graceful bouquet, not intrusive, an interesting balance between a little white fruit flesh, a lick of toast from the barrel, and the steely backbone of classical Puligny, albeit with a certain ripeness of fruit. Only the old vines for this, young vines go to the regular Chaumées. Pale lemon and lime colour. A lively bouquet with a touch more class. Everything is more evenly spread across the palate, more in white fruit, a saline touch, with a little bit of toast, and excellent persistence. Crystalline. Drink from 2027-2035.
