第一次見到 Domaine Francois Mikulski 嘅酒，有冇俾佢嗰個label吸引呀？好似粉筆字嘅酒標設計，靈感其實係嚟自釀酒師陳年時在酒桶上寫嘅筆記，好subtle咁帶出釀酒背後嘅心機同故事。只要見過一次，以後喺一堆酒入面你肯定一秒搵到佢！😝
背後嘅 Francois，喺布魯塞爾出世，細個喺布爾岡地葡萄園過暑假，慢慢培養出釀酒嘅興趣。跟舅父 Pierre Boillot 學藝後，佢同太太 Marie-Pierre喺1992年一齊開酒莊。佢哋用心管理嘅有機葡萄園，用自家堆肥、翻土、控制產量以確保濃郁、集中的風味。喺酒窖入面，葡萄會被手工篩選兩次，輕柔壓榨，用天然酵母喺涼爽酒窖發酵3至4個月。喺法國橡木桶（20%新桶）陳年12個月，再經過澄清，釀出帶有清脆礦物感、明亮酸度同出色陳年潛力嘅 Chardonnay。呢啲用心釀出嘅白酒，年輕時已經好正，陳年後更加出眾，紅酒就充滿 Pinot Noir 嘅獨特風味。

The first time you see a Domaine Francois Mikulski bottle, are you drawn to its distinctive label? The clean, chalk-like lettering, inspired by winemakers’ notes on barrels during aging, quietly honors the artistry and heritage of winemaking. Once you’ve seen one, you’ll always spot it in a lineup.😝
Behind that striking label is Francois, born in Brussels, who found his calling in winemaking during childhood summers spent in Burgundy’s vineyards. After training with his uncle, Pierre Boillot, he and his wife, Marie-Pierre, founded their domaine in 1992, crafting vibrant whites—three-quarters of their production—and elegant reds. Their organic vineyards embody a deep respect for nature. Francois tends vines with homemade compost, plowing soils to preserve soil biological balance and keeping yields low for intense, concentrated flavors. In the cellar, grapes are hand-sorted twice, gently pressed, and fermented with native yeasts in cool cellars for 3-4 months. Aging in French oak barrels (20% new) for 12 months, followed by fining, yields Chardonnays with crisp minerality, bright acidity, and remarkable aging potential. This meticulous craft produces whites that dazzle in their youth yet evolve beautifully over time, alongside reds brimming with the rich character of Pinot Noir.

Made from Pellands and Pelles with Chaumes de Narvaux being almost entirely frosted. Really quite pretty aromatics, tasting ripe but balanced. Greengage fruit, medium length, the right balance of fruit and oak. Promising. Drink from 2025-2028. Tasted Oct 2022.

Crafted from averagely 35-year-old vines, its nose offers sea spray, chalk, gunflint, bergamot, and buttery nuances. The palate bursts with spicy citrus, apple, and kiwi, accented by green pepper, finishing saline and vibrant. A mineral gem with only 800 bottles produced.

From a tiny 0.18-hectare Tillets plot above Boucheres, 1,200 bottles produced only. Pear, white peach, citrus, and white pepper blend with saline and limestone minerality. Fresh, intense, balanced, with a long, expressive finish, rivaling Premier Cru quality.

The aroma features floral notes of lilac, lily of the valley, and violet, complemented by white peach and apple. The palate is juicy with apple flavors, alongside spicy notes of pepper, resulting in a rich and persistent finish.

40% was planted in 1930, 1998 40%, and 20% in the 1950s which makes for an average vine age of around 60, if my maths is right. There was little frost damage here, enabling a yield of 45 hl/ha. A solid mid yellow. The fruit is immediately attractive, actually a very classical Charmes, with a fine thread of acidity as well. Some tannins at the end. We are in the lower part, hence more massive in style. Drink from 2026-2032. Tasted Oct 2022.
