Aubert de Villaine（1974-2022年 Domaine de la Romanée-Conti 嘅 co-owner👑），其實仲有一個Burgundy仍然唔太多人知道嘅低調小酒莊😳：位於Bouzeron、Cote Chalonnaise嘅Domaine de Villaine。

1970年代，Aubert同太太Pamela一齊救活咗一個舊修道院葡萄園（由修士喺12世紀種落），證明呢個被遺忘嘅小角落原來有咁大潛質。佢哋專注種罕有嘅Aligoté Doré——粒粒細、糖分高，花香加礦物味，夠晒優雅。Aubert靜靜地耕耘咗幾十年，終於幫Bouzeron喺1997年攞到獨立AOC——今日全法國唯一一個專出Aligoté嘅村莊級產區。

酒真係好出色：鮮活又耐放嘅Bouzeron Aligoté、優雅嘅Rully白同紅、絲滑又精準嘅Mercurey Pinot Noir。紅酒用木桶發酵，跟DRC一樣咁gentle treatment。

Aubert係早期biodynamics嘅先行者，酒莊由1986年起已經有機認證，唔用農藥、唔用化肥，只用天然酵母——就係為咗令terroir可以最純粹咁呈現出嚟🤲🏻。而家由佢外甥Pierre de Benoist接手，延續呢份低調嘅信念同極致嘅細緻。

Aubert de Villaine, co-owner of the legendary Domaine de la Romanée-Conti from 1974 to 2022👑, has a second, more personal estate that remains one of Burgundy’s best-kept secrets😳: Domaine de Villaine in Bouzeron, Cote Chalonnaise.

In the 1970s, Aubert and his wife Pamela restored an old monastic vineyard (with vines first planted by Cluny monks in the 12th century) and showed what this forgotten corner could do. Here they focused on the rare “Aligoté Doré” clone – smaller berries, higher sugar, and a floral-mineral nobility almost nowhere else in Burgundy can match. Aubert’s quiet, decades-long work earned Bouzeron its own AOC in 1997 — today the only village appellation in France dedicated solely to Aligoté.

The wines are simply outstanding: vivid, age-worthy Bouzeron Aligoté, elegant Rully whites and reds, and silky, precise Mercurey Pinot Noirs. The reds are fermented in wooden tanks, the same gentle way they do it at DRC.

Aubert was an early pioneer of biodynamics; the estate has been certified organic since 1986. No pesticides, no chemical fertilisers, only native-yeast fermentations — everything done to let the terroir speak clearly🤲🏻. Today his nephew Pierre de Benoist carries on the work with the same calm conviction and attention to detail.
