Florence Cholet擁有葡萄栽培同釀酒學碩士學位，早年在獨立實驗室分析過幾乎全勃艮第嘅葡萄酒。正式接手家族前，她到世界各地酒莊深造，包括Chapoutier、Chateau de Pibarnon、Walla Walla，同埋澳洲多個年份釀酒，國際經驗非常扎實。

而家 Florence 用可持續種植方式打理 7.5 公頃老藤葡萄園，藤齡 25 到 80 年都有🌱，分布喺 Puligny-Montrachet、Meursault、Saint-Romain 同 Auxey-Duresses。

With a licence in viticulture and a Master’s in oenology, Florence Cholet gained exceptional insight by analysing virtually every wine in Burgundy at an independent laboratory. She later refined her skills with international experience at Chapoutier, Chateau de Pibarnon, Walla Walla, and several vintages in Australia, before returning to family vineyards.

She now farms 7.5 hectares of old vines aged 25 to 80 years🌱sustainably across Puligny-Montrachet, Meursault, Saint-Romain and Auxey-Duresses.

🌿Vincent Charlot 自稱係「風土嘅農夫」（peasant of terroir），唔係釀酒師—呢種真摯嘅樸實，係佢香檳最真實嘅味道。

Vincent 只打理4.4公頃土地，分佈喺39個細小地塊，橫跨六個村莊—包括一級園Pierry同特級園Ay。每塊地都手工收成，分開釀造，展現各自獨特個性，所以每年有17至27款單一年份酒款—完全唔做多年份混釀。由於佢葡萄園好細（平均每塊地只得0.1公頃），有時一款酒只得一桶（300支）。

🌿Vincent Charlot calls himself a “peasant of terroir,” not a winemaker—and that heartfelt simplicity instantly pulls you into his captivating world of champagne.

Vincent tends just 4.4 hectares across 39 tiny plots in six villages—including premier cru Pierry and grand cru Ay. Each parcel is hand-harvested and vinified separately to reveal its individual character, resulting in 17 to 27 single-vintage cuvees each year—no multi-vintage blends. Because his vineyards are so tiny (average plot size a mere 0.1 ha), there’s sometimes as little as one barrel (300 bottles) of a single wine
