On Nov 26 (Wed), join us to taste three fully mature 1983 Pierre Bourée Fils wines🍷—rare glimpses into the house’s traditional style after over four decades.

Established in Gevrey-Chambertin in the 1860s and guided today by the Vallet brothers, Pierre Bourée Fils remains a resolute guardian of tradition, faithful to its founders’ methods: deliberate restraint in the vineyard, unhurried vinification, and patient élevage that honors the slow rhythm of great Pinot Noir.

Vineyard care is meticulous—severe pruning limits yields (25–40 hl/ha) from the outset rather than later thinning🌱, and only organic compost is applied. Soils are ploughed to maintain vitality.

In the cellar, grapes are rigorously selected and fermented whole-cluster in open vats, with gentle manual pigeage and no temperature control. Maturation lasts up to two years in old barrels—new oak introduced only to replace the eldest, allowing the full character of the vinification to shine—and bottling is unfiltered. All wines are vinified in the cuverie at Chambolle-Musigny, then matured in the cellars at Gevrey-Chambertin.

This path yields wines that demand time: structured and stem-influenced in youth, they evolve into silk-textured, profound expressions of terroir and maturity—wines for those who prize depth, nuance, and the eloquence of age.🤲🏻

These are bottles from an era when cellaring was standard, not exceptional—built for longevity rather than instant appeal. With patience, they transform from firm and characterful to refined and enduring, in a style of measured intensity and quiet restraint.
