😍Domaine Labet 唔單止係一個名字,而係 Jura 嘅真正 Benchmark。喺 Rotalier 石灰石豐富嘅坡地,Labet 家族低調地重新定義咗汝拉葡萄酒可以有幾精彩:精準、純淨、風土感極強,令人一飲難忘。早在 1970 年代後期,Alain Labet 已經開始單獨釀造同裝瓶個別地塊😌,遠早過「terroir transparency」成為潮流。更厲害嘅係,佢大膽挑戰傳統氧化陳年,引入 ouillé(補滿酒液)方式處理 Chardonnay 同 Savagnin,保留咗極致新鮮感同細膩層次💕。
而家由佢嘅下一代 — Julien、Charline 同 Romain — 接手延續呢個願景,打理住 13 公頃、45 個細分地塊,全數有機認證兼生物動力耕種。無論葡萄園定酒窖,佢哋都極度講究細節🤲🏻。全部自然發酵,長時間耐心陳年。白酒主要用舊勃艮第桶、demi-muids 同 foudres,視乎年份陳 18 個月或以上;紅酒則全去梗或部份去梗,Pinot 同 Trousseau 用桶,Ploussard 用大 foudre。硫磺只係必要時先用,而且用得極少。冇 fining、冇 filtering,全部順其自然。

😍Domaine Labet is not just a name—it’s a benchmark. From their limestone-rich slopes in Rotalier, the Labet family has quietly redefined what Jura can be: wines of striking precision, purity, and unmistakable sense of place. It was Alain Labet, in the late 1970s, who first began isolating and bottling individual parcels😌—long before “terroir transparency” became a movement. Even more radically, he challenged the region’s oxidative tradition by introducing ouillé (topped-up) ageing for Chardonnay and Savagnin, preserving freshness and allowing the nuances of soil and exposition to shine through with remarkable clarity💕.
Today, his children—Julien, Charline, and Romain—continue the vision across 13 hectares in 45 parcels, all certified organic and farmed biodynamically. They work with exceptional attention to detail in both the vineyard and cellar🤲🏻. Fermentations are spontaneous and élevage is long and patient. Whites are vinified and aged in old Burgundy barrels, demi-muids, and foudres for 18 months or more depending on the vintage. Reds are fully or partially destemmed and receive shorter ageing — in barrels for Pinot and Trousseau, and foudres for Ploussard. Sulphur is used only when absolutely necessary, and only in tiny amounts. Nothing is fined, filtered, or rushed.

Savagnin from old vines planted in 1991–93 on clay and blue marl, with 10 days skin contact. Fermented with native yeasts and aged 10 months in amphora and concrete eggs. Unfined, unfiltered, no added sulphur. Topped-up style with dried stone fruit, saline minerality, bold spice, and vibrant energy. A layered, gastronomic wine.

Chardonnay from three parcels on clay-limestone soils, aged 20 months in 228L oak barrels. Unfiltered, unfined, with minimal SO2. Complex aromas of smoky salted orchard fruit, lemon curd, starfruit and dried pineapple. Medium-bodied, vibrant acidity cuts the buttery richness with almond hints and a long mineral finish. Ages beautifully.

From the En Chalasse vineyard at 260m altitude on clay and blue marl soils. Intense golden-yellow hue with complex aromas of white fruits, flowers, grilled almond, beeswax, and sweet vanilla spices. Rich, persistent palate with harmonious balance that opens beautifully with decanting.

I also had a very young bottle of the 2015 Vin Jaune, a selection of 62% Savagnin Jaune and 38% Savagnin Vert from different lieux-dits on Lias clay, Charrière, Billat, Cret ... planted between 1945 and 1979. It's a selection of the finest biological barrels, wines matured under a fine veil of flor yeasts for seven years. 2015 produced powerful wines. From the evaporation and concentration, this has 16% alcohol, but it has kept a very low pH, 3.01, denoting vibrant freshness; and even though the acidity is not very high (5.4 grams), the volatility (0.72 grams/liter) might have helped to lift up the wine. It has classical notes of rancid walnuts, curry, celery and dry yellow flowers. The palate is pungent and persistent, with a long and very tasty, almost salty finish. Umami! It was bottled in June 2023.
