Jerome’s passion is contagious. He’s not just making wine—he’s exploring, experimenting, and pushing boundaries💪🏻. Unlike Muscadet’s often industrial, high-yield cooperatives, his winery is organic (certified 2009) and biodynamic (certified 2020). From 2 hectares of family vineyards, he expanded to 15 hectares across Getigne, Cugand, Clisson, and Vallet, carefully matching 11 grape varieties— the region’s signature Melon de Bourgogne to unexpected choices like Merlot, Chardonnay, and Savagnin—to their ideal terroir, letting nature guide the way.
Harvesting by vine age and soil type, replanting via massale selection, and exploring cover crops show his commitment to understanding his land. Clos des Bouquinardieres Muscadet Gabbro: From Melon de Bourgogne planted 1970s-1990s in gabbro-laced silt and sand soils, aged 10 months on lees in stainless steel and concrete vats. Apple and citrus notes with a creamy palate, refined by volcanic gabbro’s minerality.
Ornate: From Merlot planted in the early 2000s, it yields vibrant aromas of plum, violet, and herbs. Smooth with silky tannins, it balances rich fruit with strong minerality.
La Justice: Blends 80% Chardonnay and 20% Savagnin from 30-year-old vines, aged one year on lees in concrete eggs and amphorae. Floral, mineral nose with ripe apple, pear, and herbal notes; vibrant, structured, fresh.
