Tasting note

This is Jérôme’s entry-level white cuvée, largely vinified in steel although he is working to add more texture in recent vintages. The is a sample drawn from cuve, where the wine currently rests on its lees. The fermentation is complete, with less than 1 g/l residual sugar remaining. It has a polished straw-yellow hue in the glass, and a simply enchanting nose of sweet yellow peach, chalk dust and rose petals. This is followed by an accomplished palate, texturally full, but cleanly defined, with the sweet orchard fruit wrapped up in a lightly saline mineral character and fresh acidity. It has a little thread of bitterness I like, a Chenin character running through the middle and end of the wine, and there is plenty of drive in the finish. Very convincing, with some length. One of the best white Chinons there is.
