Join us on Sep 5 to experience the brilliance of Charles Dufour, celebrated as "the Selosse of the Aube" for wines so refined they’re often mistaken for Jacques Selosse in blind tastings. From his 6-hectare organic estate in the Côte des Bar of Southern Champagne, Charles creates highly sought-after, limited-production wines that grace the tables of Michelin-starred restaurants like Noma, where they are the house pour. Certified organic since 2010—a formidable challenge in Champagne’s wet, cold climate—his biodynamic practices, using native yeasts, herbal tea treatments to replace copper, and a perpetual reserve solera from the 1980s, draw profound depth from the Kimmeridgian limestone soils of Landreville, Essoyes, and Celles-sur-Ource.

Alongside figures like Cédric Bouchard, Charles elevates Aube’s reputation. Under the Charles Dufour & Françoise Martinot label, he vinifies his mother’s organically farmed Pinot Noir from Celles-sur-Ource, enriching his lineup with vibrant, terroir-driven fruit.

These wines are nearly impossible to find, but we’ve secured a few bottles—sparkling, still, and sweet—to showcase Charles Dufour’s mastery:

Bistrotage Extra Brut B17 is crafted from Françoise Martinot’s Landreville vines, this Pinot Noir-based sparkling cuvée blends creamy texture with salty minerality and vibrant fruit. Bulles de Comptoir #12 NV is a blend of Pinot Noir, Chardonnay, and Pinot Blanc from the Vallée de l’Ource, primarily from Landreville (80%). It incorporates a perpetual reserve from 1982 to 2020, offering richness and complexity, with a chalky texture. Coteaux Champenois 'Vin de Comptoir' Blanc V21 is a rare still white that blends a reserve solera established by Charles Dufour in 2010 with his father's aged Champagnes (1988, 1989, 1990, 1997). It delivers fresh, floral notes with a mineral-driven core, layered and complex, reflecting its unique heritage.

Coteaux Champenois 'V21' Vin Rosé is a delicate rosé from his mom’s Lieu-Dit Chervey (720 bottles produced), offering bright red fruit and a fresh, elegant finish. Coteaux Champenois 'V20' Vin Rouge comes from Françoise’s Lieu-Dit Chervey vineyard, this red (580 bottles produced) bursts with Aube’s warm, concentrated fruit. Liqueur de Comptoir Mistelle NV blends 50% from Dufour’s perpetual vin mistelle réserve since 2015. Limited to 1,000 bottles, this ratafia offers a lighter, savory profile with gentle sweetness, exquisite acidity and lower alcohol.
