Ganevat 好細心，只種咗8.5公頃 biodynamic 葡萄園，但竟然種咗17種唔同品種，好多藤齡超過90年！佢追求極致純淨同優雅，低干預釀造，最出名就係用 ouillé（補滿） 方式陳年，保留晒新鮮度，將勃艮第嘅澄澈、集中同優美帶入汝拉。佢嘅酒喝落去明亮、精準，又好有表現力🫶
Domaine des Miroirs由 Kenjiro Kagami 喺 2011 年喺 Grusse 創立，佢曾跟 Thierry Allemand、Bruno Schueller 同 Jean-Francois Ganevat 等大師學習，風格一樣追求自然同細膩。佢打理約 3 公頃 Chardonnay、Savagnin、Poulsard 同 Trousseau，用天然方式種植、溫和發酵，再長時間陳年。👏🏻佢嘅酒以純淨嘅質感、細緻香氣、帶強烈礦物感，同埋一種安靜而有力嘅內斂魅力見稱。

Jean-Francois Ganevat farms a tiny 8.5-hectare biodynamic estate planted with an astonishing 17 different varieties, many of them over 90 years old. Renowned for his pursuit of purity and elegance, he crafts low-intervention wines with remarkable finesse. While he does produce Vin Jaune, Ganevat is best known for his masterful use of ouillé (topped-up) ageing, which preserves freshness and brings a Burgundian sense of clarity, intensity, and grace to Jura’s native grapes. The result is a collection of wines that feel luminous, precise, and deeply expressive.🫶
Domaine des Miroirs, founded in 2011 by Kenjiro Kagami in Grusse, reflects a similarly meticulous philosophy shaped by his experience with Thierry Allemand, Bruno Schueller, and Jean-Francois Ganevat. He cultivates about 3 hectares of Chardonnay, Savagnin, Poulsard, and Trousseau using natural viticulture and gentle fermentation with long elevage. 👏🏻The wines are admired for their crystalline purity, subtle reduction, mineral drive, and quiet intensity.

This elegant Pinot Noir hails from a top Jura terroir known for Chardonnay. Planted ungrafted in 2006 on red marl soils with limestone, it was aged in amphora to best express the site. Anne et Jean-Francois Ganevat Cotes du Jura Les Vignes de Mon Pere 2006 - Bt | RP99

I have followed the 2006 Les Vignes de Mon Père, as it's a wine that I like very much and that somehow doesn't make sense in my engineer head. Let me explain. How is it possible to keep a white wine in topped up 600-liter barrels for 11 years (yup, that's 130 months!) and have no evolution or oxidation? Especially considering the wine has no protection other than the lees and the natural acidity, as no sulfur is said to be added to it! You would never guess its age, save for a faint volatile whiff, because the color, the aromas and vibrant flavors all point at a much younger wine. Of course nobody knows how this is produced, as Jean-François is adamant that nobody but him touches this wine; no one, even the people who work there, know what king of magic goes on with this wine, which is produced mostly with the fruit from the same Savagnin vines as the phenomenal Marnes Bleues. When I asked Ganevat to explain to me what he does with this wine, he only said, "I don't do anything!" 2006 is a slightly warmer vintage, and a friend aptly described it as an "hypothetical blend of 60% 2005 and 40% 2003,"meaning it has a little more ripeness than the 2005 and doesn't have the same depth and complexity, but it's really impressive. There are of course some yeasty aromas and a mixture of notes of dry flowers, wet chalk, and something cereal-like, again, most likely from the lees. The palate has pungent flavors and weight without being heavy. This is really sooooo good! I'm already dying to try the bottled 2007 of this!

A 100% Chardonnay from Les Saugettes in Grusse, southern Jura. Sourced from 60+-year-old vines on clay-limestone soils and farmed biodynamically, it sees 24 months in old oak barrels with no additives. Delicate aromas of toasted sesame, buckwheat, citrus, and ripe pear unfold into a pure, mineral-driven palate with chalky, saline precision.
