1996年佢喺Saint-Romain同Auxey-Duresses租地,正式創立Domaine de Chassorney。佢係有機耕作先驅,好耐之前就已採用,之後轉biodynamics,用馬拉犁、天然堆肥,慢慢將酒莊擴到十公頃,橫跨Volnay、Pommard同Hautes-Cotes。

Frederic Cossard 嘅標誌性風格在於延長發酵期 💕——白酒常達六個月。所有發酵都係自發,冇溫度控制,讓葡萄充分表達自身特性。白酒整串壓榨,放入concrete eggs或qvevris,冇攪拌、冇新橡木、冇添加硫;紅酒喺開放式木缸溫和整串浸漬(最長 42 日),之後喺混凝土蛋或陶罐內,與酒泥陳存。裝瓶前唔澄清、唔過濾,呈現礦物主導嘅白酒,同櫻桃胡椒風味嘅紅酒——年輕時已絲滑易飲,同時富陳年潛力。正因如此,酒界對佢推崇備至。Cossard 係天然酒標誌性人物,從未犧牲 Burgundy 嘅靈魂,將經典優雅與最低干預理念完美結合。

In 1996 he leased land in Saint-Romain and Auxey-Duresses, founded Domaine de Chassorney, and began his rise. An early pioneer, he embraced organic farming long before it was common, then biodynamics, working the soils with horses and natural compost. The estate grew to ten hectares across Volnay, Pommard, and the Hautes-Cotes, elevating overlooked sites into quiet stars.

Frederic Cossard’s signature lies in prolonged fermentations 💕—whites often extending to six months. Every fermentation is spontaneous without temperature control, allowing the grapes to express themselves fully. Whites are whole-cluster pressed into concrete eggs or buried qvevris—no stirring, no new oak, no sulfur. Reds undergo gentle whole-cluster maceration in open wooden vats (up to 42 days), then rest on lees in eggs or qvevris. Bottled unfined and unfiltered, they reveal mineral-driven whites and cherry-pepper reds—silky, approachable in youth, yet built to age. This is why the wine world adores him. Cossard is a natural wine icon who never sacrificed Burgundy’s soul—bridging classic finesse with minimal-intervention energy.

Cossard’s legacy lives in two projects. Domaine de Chassorney—his original estate—was fully handed to Aurelien Verdet in a seamless 2022 transition after three vintages side-by-side. Verdet, son of organic pioneer Alain Verdet, preserves the Cossard soul in the domaine’s wines. The sole change is a touch of SO2, adding a slightly more classic edge.

Today Cossard devotes himself to his negociant range, “Frederic Cossard”, sourcing pristine grapes from Puligny-Montrachet, Vosne-Romanée, and beyond, vinifying each with unwavering care.

The latest arrivals showcase Cossard's masterful touch, from the 🏺qvevri-aged Volnay Qvevris 2019 to premier crus like the ‘Les Folatieres’ from very old vines🌱 and playful Pet-Nat like La Chassornade. These pristine, soulful gems won’t stick around.
